My all-time favorite outdoor activity in the summer is backpacking. There’s something about heading out into the wilderness, well away from all the crowded trails, with everything you need in a pack on your back, that is profoundly grounding and peaceful. Last weekend, Brian and I went out on our first official backpacking trip of the season, after a failed attempt that previous weekend that resulted in us getting caught in a hailstorm. After the trip, I felt thoroughly rejuvenated and inspired to begin creating some new backpacking meal and snack recipes. I love this recipe so much that I also enjoy snacking on it off the trails during a busy work week.
