This recipe that I made on the 4th of July was tasty enough that I felt it was worth sharing! Baked Rosemary Parsnips

In my opinion, root vegetables are majorly underappreciated! Save for Thanksgiving, few Americans enjoy root vegetables as much as they should, or at least that’s what I’ve observed amongst my client population. However, root vegetables have many redeeming qualities! For one, they are an excellent source of carbohydrate, yet are unlikely to trigger significant blood sugar fluctuations due to their high fiber content. Many root veggies are also good sources of potassium, folate, B vitamins, manganese, and antioxidants. One of my favorite root veggies is the humble parsnip. Healthy Recipes: Grain-Free Banana Bread Granola

paleo granola

My all-time favorite outdoor activity in the summer is backpacking. There’s something about heading out into the wilderness, well away from all the crowded trails, with everything you need in a pack on your back, that is profoundly grounding and peaceful. Last weekend, Brian and I went out on our first official backpacking trip of the season, after a failed attempt that previous weekend that resulted in us getting caught in a hailstorm. After the trip, I felt thoroughly rejuvenated and inspired to begin creating some new backpacking meal and snack recipes. I love this recipe so much that I also enjoy snacking on it off the trails during a busy work week. Check out my new grain-free granola recipe, which is equally perfect for hiking or as a mid-afternoon snack on a busy work day!

Guest Post: How to Limit Restrictive Eating and Develop a Healthy Food Mindset

Hi everyone! I’m really excited to share with you a guest post that I recently wrote for Chris Kresser, M.S. LA.c titled How to Limit Restrictive Eating and Develop a Healthy Food Mindset. In the functional medicine space, I’ve found that there is very little talk about the potential risks of restrictive diets (such as elimination diets, gluten-free diets, etc.) on our mental/emotional health and mindset around food and our bodies. My concerns led me to write this article, which offers tips that I think can help all of us improve our relationship with food and our bodies!
